Banana Halwa

Among the varieties of Halwa available in India, the Banana Halwa is right up there among my favourites. You can make this with Bananas as well as the ripe plantain, popularly known as Nendran banana. The bananas are mashed and cooked along with ghee and jaggery to form a thick gooey halwa. Give it a try!

RIpe bananas cooked with ghee and jaggery for a gooey Indian treat

Ingredients
  

  • cup Ghee, divided
  • 1 tbsp Cashewnuts, chopped
  • 1 tbsp Raisins
  • 3 nos Overripe bananas, Large, mashed
  • ½ cup Jaggery powder divided
  • ¼ cup Water
  • 1 tsp Cardamom powder

Instructions
 

  • In a pan, heat 1 tbsp ghee and fry the cashewnuts till golden brown, followed by the raisins till they puff up. Remove and keep aside
  • In the same pan, add the mashed banana and half of the remaining ghee and cook on a low flame, stirring continuously to prevent the banana from sticking to the pan. Continue cooking until the mixture turns thick and pasty
  • Simultaneously, in a saucepan take the jaggery and the water and bring to a boil and cook until the jaggery dissolves and carmelizes a bit. The colour of this caramelised mixture determines the colour of the halwa
  • To the banana paste, add the remaining ghee and continue cooking until well incorporated
  • Add the caramelized jaggery mixture to this and mix well and cook until the halwa comes together
  • Add cardamom powder and mix well, followed by the roasted cashewnuts and raisins
  • Grease a high sided dish with some ghee. Transfer the halwa to the dish and spread it evenly and level it. Allow to set and cool to room temperature
  • Once cooled, remove from the dish and cut the halwa into chunks of your desired size and enjoy!

Notes

  • The halwa keeps well for upto a week when stored in an air-tight container
  • You can substitute the jaggery with sugar
