Butter-garlic prawns is a recipe that needs minimal planning. If you have prawns that are already cleaned and deveined, this recipe can be prepared in 15 mins flat.

It tastes absolutely delicious, with the butter, lemon, garlic and pepper flakes providing an exciting interplay of flavours. Vary the proportions of the ingredients to your liking. The only thing that we need to take care of in this recipe is to not fry/ scorch or overcook the prawns. Cook them on medium heat and vary the cooking time based on the size of the prawns. Also, if you wish to enrich the flavour further, add-in some Prawn-head Stock to the prawns as they cook.

Ingredients
  

  • 1 tbsp Olive oil
  • 2 tbsp Butter, divided
  • 500 gm Prawns, medium sized, peeled, deveined and cleaned
  • 1 no Lemon, thinly sliced
  • ½ tbsp Chilli flakes
  • 4 no Garlic cloves, minced
  • Salt, as acquired
  • 4 tbsp Lemon juice, approx one medium sized lemon
  • ¼ cup White wine (see notes)
  • ¼ cup Coriander leaves (for garmish)

Instructions
 

  • Take a large skillet and heat the olive oil and 1 tbsp butter to medium heat (see notes)
  • Add the prawns, sliced lemon, chilli flakes, garlic and salt and stir occasionally and cook until prawns turn pink (about 3min per side)
  • Take the pan off the heat and stir in the remaining butter followed by the lemon juice and white wine.
  • Check salt and add if needed. Garnish with chopped coriander leaves (see notes) and serve

Notes

  • Use any inexpensive white wine. If you desire, you can substitute the wine with water or chicken  stock
  • The prawns need to be gently cooked and not fried or scorched. Ensure pan is at medium heat and cook only until the prawns turn pink. Over-cooking will turn them rubbery
  • If you desire, substitute the coriander with parsley
