Cashew Butter
Nut butters are healthier than the regular dairy-based butter and peanut-butter is one of the more popular. If you are looking for a change from the peanut butter without giving up the associated health benefits, give this cashew butter a try.
How to make Cashew Butter
Super easy and quick to conjure. You can make it with raw as well as baked/roasted cashew nuts. Add a little coconut oil if you prefer a creamier consistency. I baked the cashews and then blended them. If you have no time to bake/ roast them, you can even go for store-bought roasted and salted cashewnuts.
Cashew butter is an absolute delight and nutritious. But, it is calorie laden and hence please enjoy it in moderation. Use it on your breads and toasts, breakfast puddings and baked goodies to name a few.
Cashew Butter
Ingredients
- 2 cups Cashewnuts
- 1 tsp Salt
- 1 tbsp Coconut oil – melted (divided)
Instructions
Baking the cashew-nuts:
- Preheat oven to 160°C
- Place the cashew nuts on a baking tray and bake them for about 10 minutes, flipping them half-way until lightly golden in colour
- Take them out of the oven and allow to cool
Making the cashew-butter:
- Take the baked cashew nuts in a blender, along with the salt
- Blend them in intervals of 20 to 30 seconds. The mixture will appear coarse and grainy (meal-like).
- Rub the sides of the jar and bring the mixture to the middle of the jar and continue to blend until the mixture comes together and thickens
- To make it creamier, add the coconut oil little by little and blend until it is well incorporated
- Transfer to an air-tight jar.
Notes
- Use store bought roasted cashew-nuts if you want to skip baking them
- coconut oil is added to make the butter creamier
- Store cashew butter in a clean air-tight jar. It keeps well in a cool-dry place for about 2 months and around 6 months in the refrigerator
