Chilli Pork, is one of my personal favourite alternate pork dishes, when I crave for something other than the Pork Bafat, Pork Indad and other traditional pork dishes. This is an absolute easy dish to prepare. It is quite versatile and pairs well with any rice or noodles or can be enjoyed as a starter/ appetizer too. There can be numerous variants of this dish based on the ingredients used. So feel free to experiment and develop your own version of it.

How To Make Chilli Pork

For this recipe, the pork is cooked twice. Initially, it is fried until it browns a bit and kept aside. This is followed by frying the rest of the ingredients and mixing with the sauces. Finally the pork is added back to the pan and cooked until ready. Corn-flour is added to bind the dish together. For the heat, I have used a mix of green chillies and cayenne pepper. This also lends a nice interplay of colours to the dish.

A delectable Indo-chinese Pork stir fry

Ingredients
  

  • 2 tbsp Vegetable oil
  • 1 kg Pork (mix of Belly and Shoulder), cut into bite-sized pieces
  • 2 inch Ginger, finely chopped
  • 1 pod Garlic cloves thinly sliced
  • 3 Green Chillies, slit
  • 2 Cayenne Pepper (can substitute with 3 green chillies), thinly sliced
  • 5 Onions, medium sized, cubed
  • tbsp Soy sauce, Dark
  • 2 tbsp Chilli Sauce
  • Salt, as acquired
  • 2 Capsicum (optional), cubed
  • 1 tbsp Corn-flour
  • ¼ cup Water

Instructions
 

Frying the Pork:

  • Heat some oil in a large enough frying pan and fry the pork on medium heat till the fat renders and the meat browns a bit
  • Remove on to a plate and keep aside

Making the Chilli Pork:

  • In the same pan, fry the ginger and garlic (see notes) for a couple of minutes
  • Toss in the green chillies and cayenne peppers and fry for a couple of minutes
  • Add the onions and fry until they turn translucent
  • Add the soy sauce and chilli sauce and give it a good mix until the veggies are coated with the sauce
  • Add the fried pork to the pan and give a good mix
  • Add the capsicum (if using) and give a good mix
  • Fry on medium heat until all pieces are well coated with the sauces
  • Add salt, if needed.
  • Stir the corn-flour into the water and add this mixture to the pan and give a good stir until the dish binds well.
  • Continue to cook until the pork is cooked to your liking
  • Take it off the flame and serve!

Notes

  • If you wish, you can substitute the chopped ginger and garlic with approx. 2 tbsp of ginger-garlic paste
  • Since Soy sauce is used in this dish, be judicious in the usage of salt
