Homemade Ghee Roast Masala
The Ghee Roast Masala is the hero of the famous Chicken Ghee Roast. I have explained in detail, the origins of this dish. Although it originated as a chicken dish, this masala is now used with a variety of hero ingredients. I will be bringing them to you one by one in due course.
Since this masala will be the base for all these dishes, I decided to make a stand-alone post for the Ghee Roast masala and link it to all the recipes that will be making use of this masala.
This recipe is good enough to make enough masala for 1Kg of the Hero ingredient. Just grind it with minimal water and store in a clean air-tight container and refrigerate for a week or two and use when needed.
Adjust the quantity of the ingredients proportionately to the quantity of hero ingredient you will be using
Ghee Roast Masala (for 1 Kg of Hero Ingredient)
Ingredients
- 12 Dry red chillies, Long I used Kumti
- 8 Dry red chillies, Short I used Ramnad
- 1 tbsp Coriander seeds
- 1 tbsp Black peppercorn
- 1 tsp Cumin seeds
- ¼ tsp Fenugreek seeds
- 1 pod Garlic cloves
- Tamarind lemon sized ball, soaked in ¼ cup water
Instructions
- Heat a pan and dry roast the dry red chillies, coriander seeds, black peppercorns, cumin seeds until you get a nice aroma. Add the fenugreek seeds (see notes) and roast for few seconds and take off the heat and let it cool
- Grind the roasted spices with minimal water along with the garlic and tamarind to a thick smooth paste.
- Refrigerate in an air-tight container for a week
Notes
- It is important to roast the fenugreek seeds for only a few seconds, failing which will give the final dish a bitter taste
- This recipe is good enough for 1 kg of the hero ingredient
