Easy Peasy Risotto| Green-Peas Risotto

The Risotto, is a easy yet versatile rice dish from Milan, located in the northern regions of Italy. The Green-Peas Risotto is my take on this Italian classic. Short-grain rice like Arborio are used to make the Risotto. The rice is cooked in a broth (usually chicken) where the starch from the rice grains combines with the broth to form a thick creamy sauce.
The Risotto is usually served as a first course or enjoyed by itself or in accompaniment with another Italian classic called Ossobucco or other similar dishes.
Rice, broth, butter, wine and parmesan are the usual suspects in a Risotto and generally saffron also is used for flavour. A variety of ingredients like different meats, mushrooms, veggies are used in a Risotto. I went for the Green-Peas. It is a very simple dish to make and hence I call my Green-Peas Risotto as Easy Peasy Risotto. Give it a try and do let me know your thoughts on this recipe. Easy Peasy Risotto
Ingredients
- 1 no Onion, small, finely chopped
- 2 tbsp Cubed bacon
- 1 tbsp Olive oil
- 1 tbsp Butter
- 75 gms Risotto rice
- 50 ml White wine
- 250 ml Chicken stock
- ¼ cup Green peas, frozen will do
- Salt, as acquired
- Pepper as required
- 2 tbsp Parmesan, grated, plus extra shavings for garnish
Instructions
- In a pan, heat Olive Oil and Butter.
- Add the onion and fry till it browns
- Add the bacon and fry for a few minutes
- Add the rice and the wine and reduce it till it is almost dry
- Add the stock. Mix well and bring to a boil
- Lower the flame, close the lid and let it cook for 15-20 mins
- Once cooked, add the green peas, salt and pepper and the grated cheese and cook for another couple of minutes
- Plate it and garnish with parmesan shavings
