How to make Pickled Onions

This is a very simple and easy-to-make recipe. We begin by making the pickling brine.

  1. Prepare the Pickling Brine:
    • In a saucepan, combine water, salt, and sugar.
    • Warm the mixture until the salt and sugar have dissolved.
    • Remove from heat and add vinegar.
    • Mix well and allow the brine to cool slightly.
  2. Pickling the Onions:
    • Slice some red onions and place them in a sterilized mason jar along with slit green chilies, star anise, and cloves.
    • Pour the cooled pickling brine over the onions in the jar.
    • For a deep red color, add a slice of beetroot to the jar.
    • Cover the jar and refrigerate for 24 hours before using.

The pickled onions can be used for up to a week, and the pickling solution can be reused to pickle a fresh batch of onions. Enjoy these tangy, flavorful onions with your favorite dishes!

Equipment

  • 1 Mason Jar, 1000ml
  • 1 Saucepan

Ingredients
  

  • 1 cup Water
  • 2 tsp Salt
  • 2 tsp Sugar
  • 1 cup White Vinegar
  • 2 cups Red Onions, sliced
  • 3 nos. Green Chillies, slit
  • 2 pcs. Star Anise
  • 3 pcs. Cloves

Optional Ingredients:

  • 1 slice Beetroot

Instructions
 

Preparing the Pickling Brine:

  • Warm the water in a saucepan and add the salt & sugar.
  • Once dissolved, take the pan off the heat, add the vinegar & mix.
  • Allow the pickling solution to cool a bit

Pickling the Onions:

  • Place the sliced red onions, chillies, star anise & cloves in a sterilized mason jar
  • Top up the jar with the Pickling Brine
  • If you wish to impart a deep red colour to the onions, add a slice of beetroot to the jar
  • Cover the jar & refrigerate for 24 hours

Notes

  • The Pickled Onions can be used for upto a week
  • The pickling solution can be reused for pickling a fresh batch of onions
