Mutton Stew | Parsi Style Mutton Stew
Who doesn’t love a good stew? This one here is a super easy mutton stew made the Parsi way. Simple ingredients and simple process. This recipe is based on the little gem I found in Isidore Coelho’s “The Chef”. With over 1600 recipes, this book is a treasure trove of culinary delights. It is a common sight to find this book in Mangalorean households. This book isn’t limited to just Mangalorean cuisine but also has gems like this Parsi style Mutton Stew (Recipe No.: 894).
Putting together a book with 1600+ recipes is a herculean task and to do it in the early 1900s is absolutely unimaginable. Hats off to Mr. Coelho for this. And if you have already glanced through my Mutton Chops recipe, you know that the Parsi and Mangalorean cuisines are lightly intertwined.
How to make Parsi Style Mutton Stew
Coming back to this recipe, I always prefer to use mutton on the bone as it adds to the flavour of the dish. I have used a mix of mutton ribs and shoulder. Pressure-cook the meat in sufficient water, along with some onions, cloves, cinnamon and salt. After the first whistle, lower the flame and cook for an additional 15 minutes. Take the cooker off the flame and let it rest till the pressure settles. Open and give it a good mix.
Make a masala paste comprising of garlic cloves, ginger and coriander leaves. Heat some ghee in a sufficiently sized pot and fry the masala for a few minutes. Strain the meat from the pressure cooker and add it to the pot and fry for a few minutes. Lower the heat, add the mutton stock and any reserved masala water from the mixer. Give a good mix.
Potatoes and green-peas can be optionally added (you can skip them totally, or even use just one of them) to this recipe and if using, add them at this point. Adjust the salt if needed and simmer on low heat until the potatoes are cooked. Take it off the heat and serve it hot with rice. Please do give this recipe a try and let me know your thoughts.
Parsi Style Mutton Stew
Ingredients
For Pressure-Cooking:
- ½ kg Mutton, on the bone, curry-cut, washed and drained
- 3 Onions, medium sized, thinly sliced
- 4 Cloves
- 2 inch Cinnamon
- Salt, as acquired
- 2 cups Water
For the Ground-Masala:
- 2 pods Garlic Cloves
- 2 inch Ginger, roughly chopped
- 1 cup Coriander leaves, roughly chopped
Additional ingredient for the Stew:
- 3 tbsp Ghee
Optional Additions:
- 2 Potatoes, large-sized, peeled and sliced thick
- 1 cup Green peas (frozen will do)
Instructions
Pressure-cooking the Meat:
- Pressure-cook the mutton with all the ingredients mentioned under "For Pressure-Cooking". Cook on high-heat until the first whistle goes off
- After the first whistle, lower the flame and cook for an additional 15 minutes
- At the end of 15 minutes, take the cooker off the flame and let it rest until the weight settles down.
- Once the weight settles down, open the cooker and give a quick mix
Preparing the Masala:
- Grind all the ingredients mentioned under "for the Ground-Masala" with a little water, to a smooth paste
- Reserve the masala water from the mixer/ grinder
Making the Mutton-Stew:
- In a large enough pot, heat the ghee and fry the masala on medium heat for about 3 minutes
- Add the meat, mix well and fry for a couple of minutes.
- Lower the heat, add the mutton-stock and the masala water. Mix well
- If you are using any of the optional ingredients, add them now
- Adjust the salt if needed
- Simmer on low heat for 10 to 15 mins, until the potatoes are cooked
- Take it off the heat and serve hot with rice.

Made this stew for christmas meal,added slit green chillies,pepper and ash gourd as well,was very tasty.Would definitely recommend this easy,simple recipe which can be put together in minutes. Thanks for sharing it Jason.
Prepared stew with beef. Added the veggies to the curry. Also added green chillies while grinding to spice up little.
