With Diwali around the corner, I was wondering what would I bring forth for you to try this year. Last year, I gave to you the “Kashi-Halwa” made of Ash-gourd. This Halwa – if we could ignore the usage of sugar- is quite a healthy and nutritious dessert. This got me thinking about a Halwa devoid of any added sugar and yet taste equally great. Looking around for a hero ingredient, the sweet potato with its natural sweetness came to mind. So here’s presenting to you this Diwali, the Sweet Potato Halwa – a healthy guilt free Indian dessert.

How to make Sweet Potato Halwa

This Halwa is super simple to make and doesn’t take much time. I have reduced the cooking time by a great deal by pressure cooking the sweet potatoes and mashing them. The mashed sweet potato is then saluted in ghee for a few minutes along with saffron and green cardamom. The natural sweetness of the sweet potato should suffice for this Halwa, but if you desire to make it sweeter, add upto 2 tbsp of Jaggery and cook it till well combined. Garnish with roasted nuts and dried rose petals and enjoy the Sweet Potato Halwa warm or even chilled.

A healthy Halwa recipe using the natural sweetness of sweet potato

Equipment

  • 1 Pressure cooker
  • 1 Masher
  • 1 Frying Pan

Ingredients
  

  • 800 gms Sweet Potato approx. 2 (medium sized)
  • Water, as needed (for pressure cooking)
  • ½ tsp Salt
  • ½ cup Ghee (divided)
  • 10 pc Almonds (roughly crushed)
  • 10 pc Pistachios (roughly crushed)
  • ½ tsp Saffron strands
  • 3 pods Green Cardamom Seeds (powdered)
  • 2 tbsp Jaggery (optional)
  • Dried Rose Petals (optional – for garnish)

Instructions
 

  • Pressure cook the sweet potatoes with sufficient water and salt for about 4 whistles
  • Allow them to cool to a workable temperature, peel and mash them well and set aside
  • In a frying pan, heat 2 tbsp ghee and fry the almonds and pistachios for about 30 secs and set aside.
  • In the same pan, heat the remaining ghee and sauté the mashed sweet potatoes along with saffron and cardamom for about 5 mins
  • add the jaggery if using, combine well and cook for another 5 mins till well combined.
  • Take it out to a serving dish and garnish with the almonds, pistachios and dried rose petals
  • This halwa can be enjoyed warm and also chilled.
