To know about Chorizo Chilli-fry we need to first know about Chorizo! Sausages are one of the most popular forms of cured meat and there are different varieties of sausages made across the globe but the one sausage which has a global presence has to be the Chorizo. The Chorizo originated in the Iberian peninsula composed mostly of Spain & Portugal. And of course eventually the Chorizo made its way to the Spanish and Portuguese colonies across the globe. The Chorizo eventually evolved based on the local culinary preferences and ingredients available. The Goan Chorizo, better known as Choris is also an evolution of the Iberian Chorizo brought to our shores by the Portuguese.

The Choris are intense in taste. They are aromatic, tangy, spicy, fiery and rich in colour. Traditionally the Chorizo was always enjoyed as a pairing with another dish or a drink. Similarly, the Choriz is enjoyed in different forms, pairing it with Pao or other breads or even rice. One of the most common and most loved way of enjoying the Choriz is in the form of Chorizo Chilli-Fry

How to make Goan Chorizo Chilli-Fry

In my version of the Chorizo Chilli-Fry, we begin with the potatoes. Mostly, people prefer to cube them and add them towards the end of the cooking, I prefer to cut them into fingers and fry them on high heat for a few minutes till they brown a bit. Follow this with the green chillies and cubed onions. Salt them and fry till the onions wilt a bit but still have their crunch. Transfer all these veggies to a plate and set aside.

Next, in the same pan fry the Chorizo on medium heat till it renders its fat. Add chopped tomatoes and continue to cook till the tomatoes turn mushy. Add the fried veggies to the pan and give a good mix. Adjust the salt if needed and if you desire, add a dash of vinegar to notch up the tart component. Cook until the potatoes are cooked through and take it off the heat.

How to enjoy Goan Chorizo Chilli-Fry

This Chorizo Chilli-Fry is best enjoyed with Pao or Sannas. They can also be enjoyed with a meal combo of Rice and Dal/Tomato Saar or even Pasta. And of-course when you have leftovers, then there is the Choris Pao. Enjoy!

Chorizo Chilli-Fry is a very popular sausage stir-fry made with the Indian version of the Chorizo viz. the Goan Choris.

Equipment

  • Wok/ High-sided Frying Pan

Ingredients
  

  • 1 tbsp Vegetable Oil
  • 2 pc Potatoes, medium sized – peeled & cut into fingers
  • 3 pc Green Chillies (optional) – sliced thin or slit lengthwise
  • 2 pc Onions – cubed
  • Salt, – as per taste
  • 500 gms Goan Chorizo – cut into cubes (with/ without casing)
  • 2 pc Tomatoes, medium sized – cubed
  • 1 tsp Vinegar – optional

Instructions
 

  • Heat the oil in a Wok/ Frying Pan and Fry the Potatoes on high heat for about 3-4 minutes till they brown a bit
  • Add the green Chillies and Onions. Add salt and cook for a minute. Do not let the onions to wilt.
  • Transfer to a plate and set aside
  • In the same pan, fry the Chorizo on medium-heat till it renders its fat (see notes)
  • Add the tomatoes and continue to cook till the tomatoes turn mushy
  • Add the fried Potatoes, onions and green chillies and give a good mix
  • Give it a taste and adjust the salt and if you desire add some vinegar to notch up the tart component a bit
  • Cook till the potatoes are cooked through

Notes

  • for this dish the chorizo is usually cooked without the casing but when cooked with the casing on, there will be juicy explosion of flavour in each bite.
  • ensure that the onions aren’t overcooked and retain a bit of their crunch
