From ending up making “fried rice” during my first attempt at cooking rice to creating this website, I have come a fair distance. This page is a collection of my kitchen adventures over the years, divided into different categories. In here, every once in a while, you will come across my attempts at redefining dishes with a new avataar. This is my way of keeping them alive by making them more exciting, recognisable and inviting to our future generations and also to all the global communities.

Should recipes be a set template for people to follow and replicate?

Maybe. But I say NO! I believe people should use recipes as a reference and not as a set template. Leave your own mark – your signature on it! Experiment with different ingredients and proportions. Neither methods are wrong. But, the joy that is there in this way of cooking is far more satisfying than merely replicating a recipe.

Being away from Mangalore, I sometimes do not have access to all the ingredients needed to enjoy some of my traditional favourites. I have sometimes improvised with what I have available. I urge you to do the same instead of not trying a recipe because you do not have access to all the ingredients needed or the cooking essentials needed to make the dish. Do not shy away from improvising!
